Perfect Pecan Pie

I used to hate pecan pie.  It was just too sweet and overloaded my taste buds   But Mom shared with me her perfect recipe for making Pecan Pie.  It is so delicious, and not too sweet.

Strawberry Tapioca Pie

This was a treat. I found a old pox of minute tapioca and the recipe was on the box.  It was fast and really sweet, especially when I added the whipped topping lol.  It was a treat. Enjoy =)

Shoefly Pie

As Thanksgiving grows ever nearer I find myself searching more and more for pies.  I've already decided on a couple of my Thanksgiving dinner staples (cherry/blueberry cheesecake, and buttermilk pie), but I'm still looking for others to try.  This pie had a very unique flavor.  It's definitely Molasses pie.  Next time I make it I'll probably stir in the topping so it doesn't make quite as much of a mess, but overall it was pretty good.

Coconut Cream Pie

Who could ask for anything more? I love coconut so making a coconut cream pie for my Dad was easy.  I gave him a choice.  With meringue or without.  He said he'd had both but would like to have one without meringue so here it is.  A delicious coconut pie.

Nesselrode Pie

This pie was a real treat to make.  I've never made 'frozen' type pies so when I had my first bite of this it reminded me of cherry vanilla ice cream.  I was delighted!  With its chopped almonds and cherries it was sweet and had a bit of crunch, as well as feeling light on the stomach and not overly heavy as some pies can be.  I will be making this one again.  Maybe not with the vanilla crust to cut out a few calories, but overall I was very happy with the way this pie turned out.  I did not adorn the top as the recipe suggested but probably will next time (it'll also give me an excuse to use more cherries ;) ).

Chicken Pot Pie

This pot pie filled up the house with such an aroma we were all going yummmm just smelling it while it cooked!  I used 1 store bought pie crust (I know I know, someday I'll learn how to make my own), and one roll out pie crust for the top.  It turned out beyond my expectations and I'll be making this again.  I don't think I'll ever buy a frozen mini chicken pot pie again!  This was easy, and tasted way better =)

Hoosier Sugar Cream Pie

Me oh my, I love this pie.  I'd never tried one before. Now that I think of it, I haven't tried a lot of pies out there.  Maybe that's why my sister found this recipe and suggested we try it.  I'm glad we did!  The top forms this nice crust and it is so smooth and creamy.  Perfect perfect perfect!

Buttermilk Pie

For weeks and weeks my sister has been reminding me not to forget about making a buttermilk pie for her.  When my sister called Friday about visiting on Sunday I made sure to do all the baking on Saturday.  And yep, I made her that buttermilk pie.  I'd never made one before and didn't know what to expect.  And I have to say WOW!  This pie is so good it makes me wonder why I'd never wanted to make it before.  Don't let the word buttermilk fool you.  It is so sweet and creamy, I couldn't tell it was even in there.  Later in the day I made a second buttermilk pie because the other one disappeared so fast and it turned out just as wonderful.  It's a really fast pie to make.  The longest part is waiting for it to come out of the oven.

Peaches And Cream Pie

While trying to make a recipe the other night, whatever could go wrong did.  First, the strawberries I wanted to use for the pie had been stored in my freezer for a long time.  I assumed they were okay, because hey they looked okay.  But, after they were thawed, they were clearly freezer burnt which definitely was.not.okay. So, we had to toss that idea and decided on Peaches.  That sounded great to us.  Then, we didn't have one of the other ingredients so I ended up making the vanilla pudding from scratch instead of from the box.  Yes, I know, but I wanted to take the easy way out.  It's never easy. Is it.

The result of our experiment (I drug my sister Stacy in on this one) was a refreshing, cool crust less pie that pleased our pallets.  So I thought I'd share the recipe with you.  I hope you enjoy!

Granted, it's not the pretties slice of pie, go me, but you get the idea =)

Peaches And Cream Pie

Ingredients:

  • 2 cups 2% milk
  • 1/2 cup sugar
  • 3 Tbsp cornstarch
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 Tbsp butter
  • 2 cans (4 oz) 100cal sliced peaches, drained
  • 1 small package Peach Flavored Gelatin
  • 1 cup water
  • 8 oz whipped topping

Directions:

  • In a medium saucepan over medium heat, heat milk until bubbles start to form at the edges.  In a bowl, combine sugar, cornstarch, and salt.  Pour into hot milk, a little at a time, stirring to dissolve.  Continue to cook and stir until the mixture thickens enough to coat your spoon. Do not boil.  Remove from heat, stirring in vanilla and butter.  Put into a bowl and place in refrigerator to cool while you proceed to the next step.
  • For the purpose of this recipe, I wanted to use peaches.  The only thing we had however were canned peaches and I'm happy with the way it turned out.  You could probably use fresh and have it be just as good if you so choose.
  • Open the cans of peaches, drain them, and distribute evenly around the bottom of a 10-inch dish.  In a medium sauce pan, put water and gelatin mix.  Stir well, and bring to a full boil.
  • Take off of stove, and bring out the pudding.  It may not have chilled completely, but don't worry.  Combine the gelatin and pudding, stirring out the lumps, and then pouring over the top of the peaches.
  • Put in refrigerator for between 8-12 hours, then once the base is firm, put the whipped topping on top of the pie.  I saved a few slices of peaches for garnish on the top, but feel free to put as many as you'd like up there.  You may need an extra can of peaches though, just so you know.

Enjoy =)
