This is one of my families favorite recipes. It's super easy. What I do is prepare the peppers in advance and freeze them in the portions we'll be using. Then, it's just a matter of letting them thaw a bit while I prepare the meat. Crockpot dishes are real time savers!
Ingredients:
- 4-5 Bell Peppers
- 1 lb. Lean ground beef
- 1 cup White rice
- 1 Medium onion, chopped
- 2 cups Tomato sauce
- 1 tsp. Salt
- 1 tsp. Black pepper
- 1 tsp. Worcestershire sauce
Directions:
- Cut the tops off the bell peppers and clean out seeds. Place in the crock pot and put about an inch in the base of the pot.
- Cook the ground beef and onion in the skillet until meat is done. Remove from heat, combine the meat mixture with the rice, tomato sauce, salt, pepper, and Worcestershire sauce. Stir well and scoop into the peppers.
- Cover and cook 3 hours on high and 6 hours on low.

I cooked it a bit too long, /blush, but that's ok! Crockpot dishes are very forgiving. All it did was make the rice less camera pretty, and peppers a bit flimsy but it is still super yummy!
