Swai with Roasted Tomatoes and Onions
Ingredients:
- 4 fresh or frozen swai fillets
- 2 cups cherry or grape tomatoes, halved
- 1 onion, chopped
- 2 tsp. oregano
- 1 Tbsp. olive oil
- 3 tsp. minced garlic
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
Instructions:
- Thaw fish if frozen, rinse fish and pat dry with paper towels. Preheat oven to 375 F degrees. Line a metal baking pan with tin foil.
- In a bowl combine ingredients then put in a skillet over medium heat until onions begin to caramelize. Remove from heat.
- Place fish fillets on tin foil, then spoon tomato mixture evenly over fillets.
- Put in oven uncovered for 30 minutes. The fish should easily flake when tested with a fork.
- Serve with a vegetable or baked potato on the side if so desired.
