Sweet Potato Pancakes

Sweet potato pancakes are one of my favorite pancake recipes.  They are very sweet and fluffy and I get an added perk by hearing my sister squeal like a little girl when she see's it's on the menu.  If you feel they are too sweet, cut out some of the sugar and that should do it.  I usually serve this with simple syrup and a dollop of whipped cream in a can.  It tastes sooooooooooooooooo good.  And no, I still don't feel that was enough O's ;)





Sweet Potato Pancakes



  • 2 Cups flour
  • 6 Tbsp packed brown sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cloves
  • 1 1/2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 2/3 cups 2% milk
  • 3/4 cup sweet potatoes, mashed
  • 1 egg, beaten
  • 1 Tbsp, melted butter

In a medium bowl, stir together the milk, sweet potatoes, egg, and melted butter.  Add wet ingredient to dry ingredients and stir until smooth.  dollop the batter in 1/4 cup amounts onto a well-greased skillet or large frying pan set to medium heat.  Cook until tops bubble and turn and cook other side.

It's also great with a little redi whip on top, giving it that pumpkin pie breakfast feeling.



Servings: 10.
