Orange Poke Cake

I've never made a poke cake before, so when I came across a Poke cake recipe I was intrigued.  I mean, who would have thought to poke holes in a cake and pour pudding in it?! Ingenious!    And it is so creamy good.  It was hard to stop at one piece!






Orange Poke Cake


Ingredients:


  • 1 box orange cake mix
  • 1/3 cup Greek yogurt
  • 2 eggs
  • 1 1/3 cups water for cake mix
  • 2 (3.4 ounce) packages instant vanilla pudding
  • 1 can evaporated milk
  • 2 cups water for pudding
  • 1 (8 ounce) tub frozen whipped topping, thawed


Directions:


  • Take the cake mix powder and combine with water, eggs, and yogurt. Pour into a 9 x 13 cake pan and bake  about 32 minutes.  *If the mix has different increments of water/oil adjust the water/yogurt amounts to match.
  • Once the cake comes out of the oven, allow it to cool a few minutes.
  • Next, with a wooden spoon handle, begin poking holes in the cake.
  • Be sure to poke right down to the bottom of the cake and kinda wiggle the stick a bit so the hole is a good size.
  • In a bowl, prepare the pudding.  Whisk together the instant pudding mix, with the can of evaporated milk, and 2 cups water. *you can use 4 cups milk if you don't want to use evaporated.  Stir until all lumps are gone. It could take longer than two minutes so try not to have your arm fall off >_>;
  • Pour pudding over the cake.  Be sure to pour it right in the holes as much as possible.  Spread it all out and using the back of the spoon gently push the pudding down into the holes.
  • Put the cake into the refrigerator to set and cool (2 hours or so).
  • Once it is completely cool, spread on the whipped topping.  This is important.  You don't want the topping to melt because the cake is still too hot!
  • Keep refrigerated.


And that's all there is to it!  I don't think my holes were big enough but it still turned out really well for my first time.
