Coconut Cream Pie

Who could ask for anything more? I love coconut so making a coconut cream pie for my Dad was easy.  I gave him a choice.  With meringue or without.  He said he'd had both but would like to have one without meringue so here it is.  A delicious coconut pie.  






Coconut Cream Pie
Ingredients:

  • 3  cups milk divided
  • 1  cup sugar
  • 1/8 teaspoon salt
  • 6  tablespoons cornstarch
  • 1  cup sweetened flaked coconut
  • 2 1/2 tablespoons coconut extract
  • 3  tablespoons butter
  • 1  tablespoon pure vanilla
  • 1  9 inch baked pie shell 


Directions:

  • In a large saucepan combine 2 cups milk, sugar and salt. Bring to a boil over medium heat. 
  • Meanwhile combine remaining 1 cup of milk and cornstarch in a bowl. mix together well and then add to hot milk mixture. 
  • Cook stirring occasionally until mixture thickens. Add coconut, butter, coconut flavoring, and vanilla.  Cook and stir until mixture thickens again. 
  • Pour into pre baked pie shell and allow to cool.  Then refrigerate until completely cool. Take it out of the refrigerator and top with whipped topping like Redi Whip in a can.
