Who could ask for anything more? I love coconut so making a coconut cream pie for my Dad was easy. I gave him a choice. With meringue or without. He said he'd had both but would like to have one without meringue so here it is. A delicious coconut pie.

Coconut Cream Pie
Ingredients:
- 3 cups milk divided
- 1 cup sugar
- 1/8 teaspoon salt
- 6 tablespoons cornstarch
- 1 cup sweetened flaked coconut
- 2 1/2 tablespoons coconut extract
- 3 tablespoons butter
- 1 tablespoon pure vanilla
- 1 9 inch baked pie shell
Directions:
- In a large saucepan combine 2 cups milk, sugar and salt. Bring to a boil over medium heat.
- Meanwhile combine remaining 1 cup of milk and cornstarch in a bowl. mix together well and then add to hot milk mixture.
- Cook stirring occasionally until mixture thickens. Add coconut, butter, coconut flavoring, and vanilla. Cook and stir until mixture thickens again.
- Pour into pre baked pie shell and allow to cool. Then refrigerate until completely cool. Take it out of the refrigerator and top with whipped topping like Redi Whip in a can.
